My mother made some sweet potato chips recently, which was nice. I was permitted to season them, which was a very risky move on her part. I cannot season anything to save my life. I try and try and I just really can’t. The sweet potato chip seasoning actually turned out OK, but this is because butter and salt were involved and you can’t go wrong with butter and salt.
1. Wash and thinly slice 3 sweet potatoes.
2. Season with some salt, pepper, melted butter, and olive oil. Add garlic if you’d like.
3. Line several cookie sheets with parchment paper and lay potato slices on the sheets. You can squish them all together, but don’t stack them on top of each other.
4. I don’t actually remember the details of Step Four. My mind says 200 or 300 degrees for 2 hours, but I recommend going off Minimalistic Baker’s recipe, which says 250 degrees for 2 hours.
5. Eat ’em. Duh!
